Question:
How do I set the Sales Opportunity and Call Back in ACT! to have specific defaults?

Answer:
You can add settings to each user's INI file which will allow you to default the Forecast Close Date, Forecast Probability, Call Back Date, and Call Back Time. To do so, browse to the main QuoteWerks folder through Windows, look for the user's INI file and open it in Notepad (either by double clicking it or right clicking, selecting 'Open With' and then selecting Notepad). Once open, make the following changes (if the field does not exist, you will need to add it):

[Preferences]
ForecastCloseDate={+30}
ForecastProbability=90

CallBackDate={+7}
CallBackTime={+30}

Please not that the {+30} and {7} in the date fields refer to days in the future. The {+30} in the Time refers to 30 minutes in the future.
