You can insert subtotal line items into the quote wherever you would like QuoteWerks to subtotal the line items in the quote.  Subtotal line items will display the total of all line items between this subtotal line and the previous subtotal line item.  If there is no previous subtotal line item, it will subtotal all the line items from the first line item to this subtotal line.  To insert a subtotal line, select the last line item to be included in the subtotal, then select the Edit|Add Subtotal menu.
